Best day ever is, when I come home from work exhausted and as soon as I open the door, my mom’s homemade soup fills the air! I could live off this hearty soup. We’ve taken out the noodles and added a “powerhouse food,” A.K.A. white beans. White beans are loaded with antioxidants, they are a good source of fiber, protein and magnesium. If you want a quick read to find out more about the benefits of white beans check this link out Here’s what my mom did to prepare her soup…in a large pot, melt butter then add sauté garlic cloves, chopped onion, celery, and carrots. While this is cooking, chop uncooked chicken into bite-size pieces. Then pour chicken broth into pot. Add diced chicken, basil, oregano, salt, garlic pepper, poultry seasoning, and dried thyme to the pot of veggies. Bring to a boil, reduce heat, cover and simmer 20 minutes.
